Potamitis Gastroenterology & Nutrition

Ingredients (for 4 per):

250 gr cooked chick-peas(can or carton)

juice of 2 fresh tomatoes

1 med size cauliflower

1 med size onion

1 big sweet potato

1tsp powder garlic

1tsp cumin

1tsp coriander

1 tsp paprika

1 tbls fresh ginger (optional)

1 tsp turmeric

300ml reduced fat coconut milk

1tsp honey

 

Preheat oven for 10 minutes and then cut all the vegetables in small pieces. Add all the indredients at once and stick in the oven for at least 30 minutes 180 degrees or until vegetables are soft. Enjoy over white or wild rice!
